Haute Cuisine: Five Restaurant Designers Are Flying High

These five American and European restaurant designers are flying high:

1. Paulo Merlini Architect
Project: Gondodoce.
Location: Gondomar, Portugal.
Standout: Wrapping down from ceiling to wall, lacquered CNC-cut MDF fins resemble white icing dripping around this bakery café.

2. Sandra Tarruella Interioristas
Project: Taberna Japonesa Wabi-Sabi.
Location: Valladolid, Spain.
Standout: Internally lit tuna, catfish, and puffer fish, handmade from parchment paper, float through a tavern.

3. International Architects Atelier
Project: Roasterie.
Location: Kansas City, Missouri.
Standout: A reference to the “air” in air-roasted coffee, an actual 1940’s Douglas DC-3 takes off from the roof’s “runway” in painted steel.

Project: Pakta.
Location: Barcelona, Spain.
Standout: A pine canopy with vibrant cotton yarn is Japanese-Peruvian fusion, like the cuisine at this encore from El Bulli’s brothers, Albert and Ferran Adrià.

Project: Girasol.
Location: Los Angeles.
Standout: The sunflower-inspired botanical theme starts with the entry’s embossed concrete floor and continues with the ceiling’s backlit tracery.
